Homemade Shake and Bake Chicken Breast

This is a quick and easy chicken dish that you can pair with almost any side. I like to serve with roasted broccoli (bakes in the same oven as the chicken), rice or quinoa, which I can make on the stove or in the oven while the chicken is baking, or if I don't have time I will microwave frozen rice. This chicken also makes great meal prep for lunches!


Prep Time: 10 min

Bake Time: 30-35 min

Total Time: 40-45 min


Ingredients

1 lb boneless, skinless chicken breast

1 cup breadcrumbs (unseasoned)

2 Tbsp flour

1.5 tsp blackened seasoning

1 tsp salt

1/2 tsp turmeric


Directions

Preheat oven to 400F. Prepare one sheet pan with a piece of parchment and preferred cooking spray.  Pour ingredients except chicken into a plastic bag, zip and shake to mix. Pour about 1/2 cup water in a shallow dish. Cut each breast in 2-3 pieces depending on the size.


Dip each piece of chicken in the water, place in the bag and shake to coat. Place each coated piece of chicken on the prepared sheet pan. (You can do this up to 8 hours in advance, cover, and place in the fridge). Spray the top with avocado or olive oil.


Bake for 30 minutes or until golden brown and cooked through.
