This is a quick and easy chicken dish that you can pair with almost any side. I like to serve with roasted broccoli (bakes in the same oven as the chicken), rice or quinoa, which I can make on the stove or in the oven while the chicken is baking, or if I don't have time I will microwave frozen rice. This chicken also makes great meal prep for lunches!


Prep Time: 10 min

Bake Time: 30-35 min

Total Time: 40-45 min


Ingredients

1 lb boneless, skinless chicken breast

1 cup breadcrumbs (unseasoned)

2 Tbsp flour

1.5 tsp blackened seasoning

1 tsp salt

1/2 tsp turmeric


Directions

Preheat oven to 400F. Prepare one sheet pan with a piece of parchment and preferred cooking spray.  Pour ingredients except chicken into a plastic bag, zip and shake to mix. Pour about 1/2 cup water in a shallow dish. Cut each breast in 2-3 pieces depending on the size.


Dip each piece of chicken in the water, place in the bag and shake to coat. Place each coated piece of chicken on the prepared sheet pan. (You can do this up to 8 hours in advance, cover, and place in the fridge). Spray the top with avocado or olive oil.


Bake for 30 minutes or until golden brown and cooked through.

I love this recipe because of its simplicity and versatility. I call this my "oh sh*t" baked pasta because it's the perfect option when you are short on time and can't sit at the stove to boil pasta. When time is limited and you need to get sh*t done, while also getting dinner on the table, this is a recipe for you. It pairs perfectly with baked meatballs, which can bake at the same time in the same oven, or you can simply add your protein of choice (cooked chicken or ricotta), or just enjoy straight up.



0.5 lb pasta of your choice

1 32 oz can crushed tomatoes

Half can of water (16 oz)

1 sprig basil

2-3 cloves garlic, smashed (or 2-3 cubes frozen crushed garlic)

Olive oil

Salt to taste


Mix all ingredient together in an oven safe baking dish and cover with either a lid or foil. Bake at 400 degrees F for 20 min. Stir, taste, and adjust seasoning to your liking.

Here are a few good things I've found recently that I want to share with you!


Feeding


I recently found the Reflo Open Training Cup and I've been so pleasantly surprised by my toddler's reaction to it. She picked it up right away and has had no accidents! The cup is not spill-proof and is designed to slow the flow with a small stopper so that a toddler's quick movements do not splash the water out of the cup. Great idea and great design!


Reading and Entertainment


How am I just learning about Ditty Bird books?? These adorable little books have embedded touch and listen buttons on each page so your little one can play whatever tune they would like to hear. Each book has a theme - classical music, instruments, nursery rhymes - and my toddler and I both love them!


For Mommy


If you're like me, your hair is typically up in a messy bun or a clip that never quite seems to hold everything up. This is a practicality when you A) don't have time or energy to do your hair and B) need to put your hair up so it's not full of sticky things or vomit or just out of your face.
